I try to keep my daughter’s diet as varied as possible. But, it’s hard to attempt to make a new meals everyday. And sometimes you need something quick that you can pop in the microwave to quickly appease a starving baby or toddler in the morning. I decided to attempt these pancakes when my daughter was around 8 months. They are very soft to eat so even if your baby doesn’t have a set of teeth yet, these can be easily gnawed without the fear of choking. They also happen to be gluten, dairy, and sugar free. So you don’t need to worry that you’re giving you baby a dessert every morning.
My daughter loves them, and lucky for me these pancakes are good refrigerated for up to five days. I just make a batch once I run out, and then I don’t have to worry about prepping her breakfast for a couple days.
- 2 ripe bananas
- 2 eggs
- 1/4 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- 1/2 teaspoon to a teaspoon of cinnamon (depending on your preference)
Directions: In a bowl smash up the bananas into mush. Add the eggs and mix them well into the banana mush. Add the baking powder, vanilla extract, and cinnamon. Mix well. Heat up some butter in a ceramic or some other type of nonstick pan. Make sure it’s coated with a thin layer of butter. Place a half-dollar sized amount of pancake mix onto the pan. I usually put the heat up high to get the pan coated then reduce to medium heat to cook the pancakes. And that’s it! Usually it makes about 10 to 12 pancakes.
If you want to sweeten them up as a treat, you can add maple syrup and powdered sugar. I just feed them to my daughter plain, and she loves them. From the refrigerator, I put them in the microwave for only 6 seconds. They heat up quick so don’t go much longer than 6 seconds.
